This is useful because vegetarian cooking can easily feel like a collection of side dishes. The recipes in the book are all delicious. This book makes it easy to incorporate whole grains and beans into our meals everyday. There are also plenty of substantial main dishes that require only a side salad and bread or grain for a complete meal. Even my non-vegetarian corndog-loving husband enjoys the results. Most of the recipes require little preparation time and they are all quick to cook and delicious. Sass is good at suggesting meal ideas using recipes in the book plus ideas for sides (e.g., the collard spaghetti goes well with the black eye pea gumbo plus sides of cornbread and baked sweet potatoes).
Whenever we take the first bite we're always amazed--not only did we make the food, it took less than a half hour total. Everything I've made from this book has been delicious and really easy. As college students, my housemates and I don't have much time to cook or much cooking experience, but we love making meals from this book together.
I thought pressure cooking would be complicated, but this book makes it super easy and delicious. The Pasta E Fagioli and Thai Chickpeas are new family favorites. Great flavor combinations here. I have only made three recipes so far, but gave this book 5 stars. I am vegan and eager to add as many bean recipes as possible to my repertoire.
I can't imagine better books to buy if you are interested in saving time while cooking, and in eating very well indeed. The vegetarian cookbooks she has are as enticing to meat-eaters as any books, and vice versa. They have charts for how long to cook many kinds of food. Thank you, Ms. Soups, sauces, beans, rice dishes. This book contains the most used recipe in my household -- pressure cooker risotto.
All of her books have fantastic recipes, with variations, and instructions that include different makes and styles of pressure cookers. She does all the testing and all the guess work for you. A dish that normally takes 45 minutes to an hour, with much attention required becomes a dish taking about 8 minutes cooking time. reading her cookbooks leave me hungry every time.I can't recommend her books highly enough. Sass. Lorna Sass takes dishes that are incredibly time intensive, and turns them into simple, after work, no time at all recipes that we can use every day.
There are recipes that make more than one course in one go.
I recommend this book without reservation to all working mothers and fathers. How about coming home from soccer practice after work with three hungry family members and create a healthy, homemade vegetarian dinner quickly that gets plenty of compliments. I've been amazed at the variety and taste of the many meals I have made from this book with my pressure cooker.
